Appearance:
Golden yellow.
Nose:
Mineral with floral overtones of honeysuckle and lily in its youth, Tabasco, wax, honey.
Palate:
A well-balanced, highly harmonious wine with a finely spiced finish that evolves towards honey with age.
Sommelier's advice:
Soft-boiled egg, mushroom emulsion, comté cheese and walnut kernels.
Grape variety/varieties:
100% Marsanne.
Harvest:
To ensure a perfect balance between ripeness and freshness, each parcel is harvested by hand in several passes.
Soil:
Granitic slopes to the south of the municipality of Tournon (Tournon granite).
Vinification:
Whole grape pressing; moderate use of sulphur. Light settling. Fermentation with indigenous yeasts, mostly in demi-muids, foudres (85% of which 10% new) and stainless steel vats (15%).
Ageing:
Aged on the lees for 11 months with a few stirring of the lees.
