Appearance:
pale yellow colour with green tints, limpid
Nose:
floral (acacia, honeysuckle, linden-tree), fruit (plum, pear), light smoky notes
Palate:
the attack is fresh, well-balanced, mineral and salty notes with an aromatic and quiet tight final.
Sommelier's advice: Serve with: Scallops, saffron risotto and Parmesan tuiles.

Harvest:
To ensure a perfect balance between ripeness and freshness, each parcel is harvested by hand in several passes.
Soil:
Hillsides with soils composed of degraded biotite granite rich in mica.
Vinification:
Whole grape pressing, moderate use of sulphur. Light settling. Fermentation with indigenous yeasts, mostly in demi-muids, foudres (85% of which 10% new) and stainless steel vats (15%).
Ageing:
Aged on lees for 11 months.
