Appearance:
very deep garnet red.
Nose:
black fruit jam, smoked and mineral overtones.
Palate:
smoky and peppered aromas. Tight tannins with a long persistency in mouth. According to the vintage, the wine can be kept from 30 to 60 years, indeed from 50 to 75 years.
Sommelier's advice:
As an accompaniment, we suggest: Roast duck breast, aromatic gravy and heirloom vegetables.
Serving temperature; 15-17°C.
Grape variety/varieties:
100% Syrah.
Harvest:
The grapes are hand-harvested at optimum ripeness.
Soil:
Brown soil composed of "Tournon" granite. Coarse-grained granite, blakc micas and quartz inclusion fractured and locally altered. South, south-east facing vines terrace.
Vinification:
Vinification in small concrete vats after destemming. Fermentation with indigenous yeasts and moderate use of sulphur. Maceration for 3 to 4 weeks.
Ageing:
Entirely in casks and small wooden barrels for around 18 monts, with 15% new barrels.
