Appearance:
Dark, garnet black with purple highlights throughout.
Nose:
Lovely notes of dark fruit (cherry, blackberry), beautiful minerality with graphite notes.
Palate:
Soft, rich and elegant on entry. Very fine, silky tannins. Long-lingering finish and aromatic notes reminiscent of the granite terroir
Sommelier's advice:
As an accompaniment, we suggest: Rack of veal Milanese style, parsniip purée.
Serving temperature: 15-17°C.
Grape variety/varieties:
100% Syrah.
Harvest:
The grapes are hand-harvested at optimum ripeness.
Soil:
Brown soil derived from "Tournon" granite. Coarse-grained, black mica granite and quartz inclusion fractured and locally altered. Amphitheatre of east-facing vines.
Vinification:
Vinification in small concrete vats after destemming. Fermentation with indigenous yeasts and moderate use of sulphur. Maceration for 3 to 4 weeks.
Ageing:
Entirely in casks and small wooden barrels for around 18 months, with 15% new barrels.
