Appearance:
Very deep and black with satiny tints.
Nose:
The first nose is dominated by notes of graphite and cold smoke, and then opens up to notes of bramble leaves and mixed berries.
Palate:
Compact on entry, with chiselled tannins and notes of black pepper and roasting over a saline finish. Verticality and purity are the keywords here.
Sommelier's advice:
As an accompanient, we suggest: Wine cook, fricasse of porcini mushrooms.
Serving temperature: 15-17°C.
Grape variety/varieties:
100% Syrah.
Harvest:
The grapes are hand-harvested at optimum ripeness.
Soil:
South-east facing hillside, in the northern part of the appellation. The soils here are composed of rocky micashists.
Vinification:
Vinification in small concrete vats after destemming. Fermentation with indigenous yeasts and moderate use of sulphur. The temperature of vinification does not exceed 28°C. Maceration for 3 to 4 weeks.
Ageing:
Aged in barrels (20% new wood) for 16 to 18 months.
