Tasting notes
Appearance:
Light gold.
Nose:
Mineral and still shy. Notes of struck pebbles and ripe fruit.
Palate:
Broad on entry. The palate is taut and smooth. Fresh, mineral finish. Still holding back slightly at the current time, with great ageing potential. The wine expresses itself on aeration.
Sommelier's advice:
Ermite white is still at ‘rough diamond’ stage, although it is already exciting us with its incredible purity and crystalline notes accentuated by a saline finish. Perfection!
Grape variety/varieties:
Marsanne. Selection of our oldest vines.
Harvest:
Hand harvesting at maturity.
Soil:
Situated at the top of the Hermitage hill, around the chapel, in a place named the “Ermite”, soils are very poor and granitic.
Vinification:
After a light cold-settling, fermentation is entirely made in casks between 18 and 20°C.
Ageing:
After a long period of fermentation, the wine is matured on lees, with regular stirrings, between 10 and 12 months.
