The European regulation on organic farming covers not only the production and processing but also the control and packaging of organic food. A product may claim the word ‘organic’ when the rules specific to organic production defined in one of the regulations recognized by the European Community are complied with, and the operator has obtained a valid certificate for that product. To this end, each operator undertakes to be controlled at each stage of the production chain by an independent third party accredited according to the ISO 65 standard, such as ECOCERT. Our Spanish wines are certified by the regional organization CAECyL, Public Control Authority for Organic Production of Castilla y León, itself mandated by the Spanish National Accreditation Body.

The Demeter certification program was established in 1928, and as such was the first ecological label for organically produced foods. Demeter biodynamic certification is used in over 50 countries, it guarantees the respect of the biodynamic principles on farm property and during the transformation of the products.

" The wine of the vintage and I’ll include all the wines of the northern Rhône, red and white in that grouping is the 2014 Ermitage l’Ermite Blanc. Always made from 100% Marsanne that comes from the granite soils of the l’Hermite lieu-dit, it was aged 11 months in 25% new demi-muids before being bottled unfined and unfiltered. Its medium-gold color is followed by a heavenly bouquet of liquid rock, hazelnut, caramelized pineapples, stone fruits and quince. Thick, unctuous, full-bodied, thrillingly pure and laser focused with a dry, blockbuster finish that just won’t quit, it needs 2-3 years of cellaring and will drink nicely over the following three or more decades."

Situated at the top of the Hermitage hill, around the chapel, in a place named the “Ermite”, soils are very poor and granitic.
After a light cold-settling, fermentation is entirely made in casks between 18 and 20°C.
After a long period of fermentation, the wine is matured on lees, with regular stirrings, between 10 and 12 months.
