Wines said to come from « organically grown grapes» can use the French « AB » (organic farming) logo. This means that we comply with “Organic Farming” specifications. The French « AB » logo comes from the French Agricultural Ministry.
ECOCERT is an organic inspection and a certification organism founded in 1991 by agronomists for sustainable development, which aims to offer recognition to those who engage in this type of production. The ECOCERT’s principal activity consists in an inspection, in the field, of the respects of a standard’s demands (regulation, standard or specification). Then, ECOCERT issues a document which certifies the compliance of the products, systems or services with the standard. ECOCERT principally certifies food and food products but also certifies cosmetics, detergents, perfumes and textiles.

"At the very top of the appellation’s dome of decomposed granite is l’Ermite. This wine is the equivalent of drinking liquified rocks.The 2006 Ermitage l’Ermite blanc is pure perfection. A liqueur of licorice, crushed rocks, white citrus, and currants jumps from the glass, and in the mouth, the wine is one seamless, layered mouthful of citrus oil, white flowers, white peach, and honeysuckle. Just amazing. I am sure both of these vintages will live for 50-100+ years."

"Yellow-gold. Wonderfully complex bouquet of spicy citrus, pear and melon complicated by dusty minerals, smoky lees and fresh rose. Fleshy but focused on the palate, offering spicy orchard fruit flavors, lemon pith and sweet tangerine on the finish. Gained weight with air without any loss of energy or clarity, picking up exotic spice and licorice flavors with air. There are only 228 cases of this juice."

Situated at the top of the Hermitage hill, around the chapel, in a place named the “Ermite”, soils are very poor and granitic.
After a light cold-settling, fermentation is entirely made in casks between 18 and 20°C.
After a long period of fermentation, the wine is matured on lees, with regular stirrings, between 10 and 12 months.
