Appearance:
brilliant and limpid straw yellow.
Nose:
complex aromas of vanilla, almonds, dried fruits and linden-tree. The minerality is marked (typical of the soil).
Palate:
very round and rich wine. An elegant balance, with a light bitterness at the end. Very ripe white fruit aromas (peach and apricot). Beautiful length in mouth and a huge complexity. According to the vintage, the wine can be kept from 30 to 60 years, indeed from 50 to 75 years.
Grape variety/varieties:
Marsanne. Selection of our oldest vines.
Harvest:
Hand harvesting at maturity.
Soil:
Situated at the top of the Hermitage hill, around the chapel, in a place named the “Ermite”, soils are very poor and granitic.
Vinification:
After a light cold-settling, fermentation is entirely made in casks between 18 and 20°C.
Ageing:
After a long period of fermentation, the wine is matured on lees, with regular stirrings, between 10 and 12 months.
