Appearance: yellow straw which shows the perfect maturity of the grapes, limpid and brilliant.
Nose: intense, white fruit (peach) and apricot.
Palate: very rich with white peach flavours, minerals, a hint of bitter almond which gives an impressive length.
Sommelier's advice: Fresh water fish. Fish mousse. Soft goat's cheese
Grape variety/varieties: Marsanne 100%
Harvest: Hand picking.
Soil: Limestone and granite.
Vinification: The grapes are pressed. The alcoholic fermentation takes place in vat and oak barrels at cold temperatures.
Ageing: 80% in vat and 20% in barrels. The bottling takes place at the end of spring.
