Tasting notes
A lightly toasted first nose with hints of almond and brown butter then, after the wine has had a chance to breathe, complex aromas of ripe yellow-fleshed fruit and sweet spices emerge.
Broad on entry to the palate, well-balanced with a lovely downy texture. The structure is dense and saline, the roasted yellow fruit gives way to fine empyreumatic overtones on the finish.
Recommanded food pairing: Sole Meunière, grenobloise sauce and glazed carrots. Serving temperature: 12 ° to 14 °C
Partially decomposed porphyroid granites. Soils tending to be sandy, with a high quartz content.
Direct pressing of the whole bunches. Selection of the best juices from the press. Light settling. Fermentation in demi-muids, 15% of which are new.
Aged in demi-muids on the gross and fine lees for 10 to 11 months.
