Appearance:
deep golden yellow.
Nose:
candied fruits and honey.
Palate:
the wine has an outstanding balance, concentrated and a great length.
Sommelier's advice: The Vin de Paille will pair perfectly with a tart with caramelized Normandy apples, with a touch of cinnamon, and thick cream.
Grape variety/varieties:
100% Marsanne.
Harvest:
Hand-harvested when just ripe, then dried on crates for over 45 days.
Soil:
Each vintage is marked by the uniqueness of the Hermitage Terroir.
Vinification:
The obtained must has a minimum concentration of 360 g of sugar per liter. Fermentation in big wooden barrels (600 liters), until alcoholic strenght approaches 14%, for a residual sugar content of 120g/L.
Ageing:
Bottling takes place after 24 months of ageing, to allow the wine to acquire its full balance and complexity.
