Wines said to come from « organically grown grapes» can use the French « AB » (organic farming) logo. This means that we comply with “Organic Farming” specifications and that we do not use any chemical fertilizers, or chemical weed killers, or pesticides, or chemical fungicides. The French « AB » logo comes from the French Agricultural Ministry.
ECOCERT is an organic inspection and a certification organism founded in 1991 by agronomists for sustainable development, which aims to offer recognition to those who engage in this type of production. The ECOCERT’s principal activity consists in an inspection, in the field, of the respects of a standard’s demands (regulation, standard or specification). Then, ECOCERT issues a document which certifies the compliance of the products, systems or services with the standard. ECOCERT principally certifies food and food products but also certifies cosmetics, detergents, perfumes and textiles.

In 1998, the members judged it essential to determine, in practical terms, the fundamental principles that any wine producing property must respect in order to be able to describe itself as a biodynamic operation. A specific set of specifications for the growing of vines and vinification was therefore established, excluding the use of all oenological products that aim to modify the grapes’ initial balance and neutralize the effect of vintages, with a view to preserving all of the potential of the “terroir” in the wine and retaining the energy capital acquired by the biodynamic farming of the vines. In order for inspections to be as objective as possible, the Union decided to entrust them to an independent body, ECOCERT SAS France, which checks that each member property respects the viticulture and vinification requirements. After four years of conversion to biodynamic agriculture, the SIVCBD issues official BIODYVIN approval to members that have been inspected during this period. All SIVCBD domains’ member are therefore AB certified by an inspection body and BIODYVIN by the SIVCBD following the Ecocert SAS France control.

Demeter is a reference to the Greek Goddess of grain and fertility. The Demeter certification program was established in 1928, and as such was the first ecological label for organically produced foods. Demeter products have a double certification: they are controlled and certified organic according to the European specifications and according to the Demeter specifications. Demeter biodynamic certification is used in over 50 countries, it guarantees the respect of the biodynamic principles on farm property and during the transformation of the products.
The ladybug (or ladybird), organic viticulture’s precious little helper, is the symbol used on all our wines produced from organically grown grapes. The green logo of a little ladybug on a leaf identifies all our "biodynamic" wines.

"The 2002 Ermitage Vin de Paille, a heady, unctuously textured sweet white, shows notes of white truffles intermixed with marmalade, roasted nut, peach, and apricot characteristics. As I have said so many times over the last 15 years, the top Chapoutier wines are meant for very long term drinking, and are not designed for immediate gratification. Everything Chapoutier is doing, from his bio-dynamically farmed vineyard to tiny yields, extended fermentations, indigenous yeasts, and no fining or filtration, is done to produce the essence of a vineyard and a vintage. His track record since 1989 and 1990 admirably proves that these are indeed remarkable wines made by a young genius who refuses to compromise. Michel Chapoutier has been misunderstood by some of his peers, and there is a lot of jealousy when someone this young is so incredibly talented, but it is an irrefutable fact that these are wines of singular greatness as well as longevity."

"Medium gold. Aromas of peach, barley sugar, honey, roasted nuts and clove. Supersweet and thick but fresh in the mouth, with flavors of dried apricot, honey, spices and earth. Not as voluptuous, full-blown or nuanced as the 2003 version, but I like the edge of fresh acidity on this wine's long, spicy finish. A bit lower in residual sugar than the '03, at 130 vs. 160 grams per liter."

Sommelier's advice: The Vin de Paille is more a desert in itself than a wine used with deserts. However, it can be matched with fruits pies : apricots, citrus fruits...
The crop is harvested by successive sortings and then dried on a straw bed for almost two months before pressing.
The winemaking process of the Vin de Paille finds its roots in the vineyard of the Hermitage. In order to revive this tradition, Michel CHAPOUTIER has decided, since 1990, to devote a part of his white Hermitage crop to raisining on straw bed.
The obtained must has a minimum concentration of 360 g of sugar per liter. After fermentation, the actual alcohol content is close to 15% vol for a residual sugar amount of 105 g per liter.
Fermentation and ageing are entirely performed in oak casks. Bottling is carried out 24 months later.
