Tasting notes

Appearance: Crystalline with pale pink highlights.

Nose: Intense, complex aromas, nicely accentuated by foral notes.

Palate: Rich, long and velvety on the palate, combined with a freshness which gives the wine an ethereal touch. Very one character.

Sommelier's advice: Casual meal: king shrimps a la plancha.
For fine dining: strawberry tartare with basil and a dash of lime juice.

Grape variety/varieties: Syrah, cinsault, rolle, grenache noir

Harvest: Harvesting is carried out at night, by machine

Soil: Soil here is poor and shallow and made up of limestone and clay sandstone.

Vinification: Short, cold maceration on the skins. Low temperature fermentation. Constant protection against oxygen to preserve aromatic potential.

Ageing: 5 month in stainless steel vats

Alcohol content: 12
