Tasting notes
Appearance:
strong, deep ruby hue.
Nose:
intense with red and black fruits (raspberry, blackcurrant), accompanied by notes of spice, menthol and chocolate.
Palate:
a powerful and well balanced wine with a round character and silky tannins. Fresh finish with ripe fruit notes.
Sommelier's advice: Food pairing: game (wild boar, hare and venison), red meat and medium-hard cheeses. Best enjoyed at room temperature. Serving temperature: 18°C.

Syrah, Grenache.
Soil:
Sandy clay soil with lots of stones on the surface and clay-limestone deeper down. The vineyards are in the town of Pourcieux at the foot of Mont Aurélien in a place called Esquirol.
Mediterranean climate.
Vinification:
Harvesting is carried out by hand and takes place in the morning to preserve freshness and aromas. The grapes are entirely destemmed and then put into vats. After ageing in concrete tank for 4-6 weeks, the wine is aged in barrel for 12 months.
