Tasting notes
notes of graphite, black fruit jelly and laurel, complemented by hints of cedar and fig leaves.
Full-bodied on entry, followed by velvety tannins. Great balance between freshness and power with an aromatic range dominated by spices, nice ripe black fruit and sooty notes.
Serving temperature: 15-17°C.
Vinification in small concrete vats after destemming. Fermentation with indigenous yeasts and a moderate amount of sulphur is used. Maceration for 3 to 4 weeks.
Totally in casks and small wooden barrels for around 16 to 18 months, with 10% new barrels.
