Tasting notes
Appearance:
Rouge Clair presents a bright ruby colour, announces a great freshness.
Nose:
Delicate aromas of strawberries, mashed raspberries with floras notes which gives a light touch.
Palate:
Clear and vivid attack, with a well-balanced acidity which makes the tasting refreshing. The delicate and fruity final leaves a nice sensation.
Sommelier's advice: This elegant wine pairs well with light dishes, spicy flavors like tandoori chicken, or French classics like pâté en croûte, thanks to its soft tannins.
Grape variety/varieties:
At once visionary in its elaboration and singular in its tasting, this Rouge clair is made from 80% Grenache noir and 20% Syrah carefully selected from the clay- limestone terraces.
Harvest:
The selected vines are well-balanced, not overly vigorous, and harvested in perfect health. Mechanical harvesting is carried out at night, and the grapes are picked slightly under-ripe to preserve the purity of fruitiness and freshness.
Vinification:
After de-stemming and vatting, the grapes are yeasted and cooled for 72 hours without intervention to limit color extraction and enhance aromas. Alcoholic fermentation then continues at 20°C, followed by light sulfiting after malolactic fermentation to preserve the fruit’s brilliance.
Ageing:
The Grenache and Syrah vats are blended a few weeks after vinification. Aged in stainless steel vats for 3 months.
