Appearance:
A coppery colour with hints of brown caramel.
Nose:
Initially revealing notes of vanilla and black tea, the nose evolves over time towards nuances of leather, candied apples and delicate notes of hay.
Palate:
The smooth, fine attack gives way to an elegant palate with a floral bouquet, a hint of nutmeg and a smoky finish.
Vinification:
After a rather cool June, the summer of 1997 turned out to be a scorcher. In these conditions, the grapes reached historic levels of ripeness, making comparisons as far back as the legendary 1947 vintage.
This eau-de-vie is produced by distilling our marcs from the 1997 vintage using our traditional all-copper column still.
It was then aged in French oak barrels (228 litres) for 20 years. This ageing process has given it a coppery colour with hints of brown caramel.
