Tasting notes
Appearance:
Golden colour with bronze highlights.
Nose:
Initially revealing notes of caramelised apple, the nose evolves over time towards nuances of white-fleshed fruit, curry and Sencha tea.
Palate:
The soft attack gives way to a palate delicately built around notes of vanilla and light tobacco. Complex aromas of a bouquet of dried herbs and a delicately saline mouthfeel bring the work to a close.
Vinification:
With summer conditions close to perfection, the 1995 vintage enabled the most patient winegrowers to produce some very fine wines. Once the September rains had subsided, the vines produced remarkably ripe, well-balanced fruit.
This Eau-de-Vie is distilled from our marcs from the 1995 vintage using our traditional all-copper column still.
It was then aged in French oak barrels (228 litres) for 20 years. This ageing process has given it a golden colour with bronze highlights.
