Appearance:
Golden colour with bronze highlights.
Nose:
On the nose, aromas of vanilla mingle with those of quince paste, complemented by hints of dried herbs.
Palate:
The palate is opulent, dominated by notes of pears and lime blossom. The long, complex finish is dominated by sweet spices and essences of cedar.
Vinification:
Despite a more timid autumn, the fine summer of the 1994 vintage produced rich wines with good ageing potential. This Eau-de-Vie is distilled from our marc from the 1994 vintage using our traditional all-copper column still.
It was then aged in French oak barrels (228 litres) for 20 years.
This ageing process has given it its golden colour with bronze highlights.
