Following on from a cool month of June, the summer of 1997 brought us scorchingly hot temperatures. These conditions enabled the grapes to reach historically high ripeness levels, making this vintage comparable to the iconic 1947 vintage.
This eau-de-vie is made from the distillation of our marcs from the 1997 vintage using our traditional alembic copper column still.
It was then aged in 228 litre French oak barrels for 20 years. It has gradually developed a copper coloured hue with caramel tints thanks to the ageing process.
The first nose discloses notes of vanilla and black tea which evolve towards leather, stewed apples and a hint of fennel.
Smooth and delicate with an elegant mid-palate offering floral aromas combined with a touch of nutmeg. Smoky notes linger on the finish.
Over the years, the gradual evaporation of the alcohol (known as the “part des anges”) has naturally reduced the alcohol by volume to 42%.
