Appearance:
golden yellow colour with green lights.
Nose:
fresh, with roasted notes, slightly of brioche, aromas of white-flesh fruit, fennel, anise and honeysuckle.
Palate:
the attack is fresh, suave and well-balanced. Full-bodied wine with a great length, and slightly roasted and aniseed aromas.
Sommelier's advice: As an accompaniment, we suggest: Fesh pan-fried scallops with a citrus fruit butter.

Harvest:
The grapes are hand-harvested at optimum maturity.
Soil:
Clay-limestone soil from the Crussol massif with slight granite colluvium. Located in the heart of the village of St Péray, the plot faces south-east.
Vinification:
Whole grapes are pressed and a moderate amount of sulphur is used. Light settling. Fermentation with
indigenous yeasts, mostly in half-muids (included 10% new oak and 10% stainless steels vats.)
Ageing:
Aged on lees for 11 months with occasional stirring.
