Wines said to come from « organically grown grapes» can use the French « AB » (organic farming) logo. This means that we comply with “Organic Farming” specifications and that we do not use any chemical fertilizers, or chemical weed killers, or pesticides, or chemical fungicides. The French « AB » logo comes from the French Agricultural Ministry.
ECOCERT is an organic inspection and a certification organism founded in 1991 by agronomists for sustainable development, which aims to offer recognition to those who engage in this type of production. The ECOCERT’s principal activity consists in an inspection, in the field, of the respects of a standard’s demands (regulation, standard or specification). Then, ECOCERT issues a document which certifies the compliance of the products, systems or services with the standard. ECOCERT principally certifies food and food products but also certifies cosmetics, detergents, perfumes and textiles.

In 1998, the members judged it essential to determine, in practical terms, the fundamental principles that any wine producing property must respect in order to be able to describe itself as a biodynamic operation. A specific set of specifications for the growing of vines and vinification was therefore established, excluding the use of all oenological products that aim to modify the grapes’ initial balance and neutralize the effect of vintages, with a view to preserving all of the potential of the “terroir” in the wine and retaining the energy capital acquired by the biodynamic farming of the vines. In order for inspections to be as objective as possible, the Union decided to entrust them to an independent body, ECOCERT SAS France, which checks that each member property respects the viticulture and vinification requirements. After four years of conversion to biodynamic agriculture, the SIVCBD issues official BIODYVIN approval to members that have been inspected during this period. All SIVCBD domains’ member are therefore AB certified by an inspection body and BIODYVIN by the SIVCBD following the Ecocert SAS France control.

" Even better, and topping out on my scale, the 2003 Ermitage le Pavillon comes all from the granite soils of the Les Bessards lieu-dit and was aged 100% in new barrels. Its inky ruby/black color is followed by off the hook aromas and flavors of plum, creme de cassis, licorice, crushed rocks and violet/incense-like qualities. This gives way to a full-bodied, dense, seamless and textured 2003 that has building tannin, awesome concentration and a blockbuster finish. Drink it anytime over the coming two decades, although, as with the Le Meal, it’s gorgeous now."

"Bright, deep red. Spicy, vibrant and tangy nose offers redcurrant, wild strawberry and minerally raspberry tones. Impressively fresh and nervy on the palate, with lift and thrust to the exuberant red fruit tones. As this opens in the glass, the fruit tones take a darker turn toward blackberry and cassis, also picking up notes of graphite and licorice. The deeply concentrated, spicy and wonderfully long, sweet finish is framed by huge but remarkably integrated tannins."

Syrah. The age of the vines (90-100 years) guarantees a very high quality production.
Grapes are hand-harvested to the limit of over-maturity. Due to their age, these vines give low yields.
This plot has an area of approximatively 4 ha. It has given its name to this plot selection and has a particular geology. This soil is made up with sediments on a fine layer being on a granitic subsoil.
Totally destemmed, the grapes ferment in concrete tanks. From one to two daily treadings ensure a good extraction. The temperature of fermentation does not exceed 32°C. Maceration lasts between 4 and 5 weeks, to obtain a polymerization of tannins. Only the free-run wine is used for this single vineyard.
The wine is matured in oak casks (with a 30% average proportion of new ones) between 18 and 20 months. The clarification is natural.
