Wines said to come from « organically grown grapes» can use the French « AB » (organic farming) logo. This means that we comply with “Organic Farming” specifications and that we do not use any chemical fertilizers, or chemical weed killers, or pesticides, or chemical fungicides. The French « AB » logo comes from the French Agricultural Ministry.
ECOCERT is an organic inspection and a certification organism founded in 1991 by agronomists for sustainable development, which aims to offer recognition to those who engage in this type of production. The ECOCERT’s principal activity consists in an inspection, in the field, of the respects of a standard’s demands (regulation, standard or specification). Then, ECOCERT issues a document which certifies the compliance of the products, systems or services with the standard. ECOCERT principally certifies food and food products but also certifies cosmetics, detergents, perfumes and textiles.
The ladybug (or ladybird), organic viticulture’s precious little helper, is the symbol used on all our wines produced from organically grown grapes. If you want to know which of our wines are “organic”, look for the white logo showing a little ladybug on a leaf.

The 2001 Ermitage Le Pavillon exhibits a saturated ruby/purple color as well as a big, sweet nose of camphor, ink, creme de cassis, and hints of licorice as well as smoke. Although dense, rich, and full-bodied, the 2001 reveals more acidity in its delineated, nervous personality. Unquestionably great and intense, it will be less charming and precocious than its 2000 sibling. Anticipated maturity: 2010-2030."

Syrah. The age of the vines (90-100 years) guarantees a very high quality production.
Grapes are hand-harvested to the limit of over-maturity. Due to their age, these vines give low yields.
This plot has an area of approximatively 4 ha. It has given its name to this plot selection and has a particular geology. This soil is made up with sediments on a fine layer being on a granitic subsoil.
Totally destemmed, the grapes ferment in concrete tanks. From one to two daily treadings ensure a good extraction. The temperature of fermentation does not exceed 32°C. Maceration lasts between 4 and 5 weeks, to obtain a polymerization of tannins. Only the free-run wine is used for this single vineyard.
The wine is matured in oak casks (with a 30% average proportion of new ones) between 18 and 20 months. The clarification is natural.
