Tasting notes
Appearance:
Deep purple with garnet highlights.
Nose:
Concentrated nose of black fruits and garrigue. Notes of sweet spices, slightly smoky. Beautiful
complexity when aerated.
Palate:
Velvety attack, with a generous palate and well-integrated tannins. Beautiful notes of cigar box, black fruit coulis, with a hint of cocoa and bacon. Powerful and persistent finish, very promising.
Sommelier's advice:
Iberian pork cheek roasted at low temperature with sautéed potatoes, veal tournedos, creamy polenta, and
seasonal mushrooms.

100 % Tempranillo
Harvest:
The grapes are harvested manually in small crates.
Soil:
The vineyard is located on ancient high-altitude terraces (850-900 m above sea level). Deep, clay-limestone, even marl-limestone soil.
Vinification:
100% destemmed
Fermentation in concrete vats with indigenous yeasts, 30 to 40 days of maceration with two pump-overs per day.
Ageing:
The wine is aged in 300-liter French oak barrels for 24 months, then for three years in corked bottles.
