Tasting notes
Appearance:
Deep purple with garnet highlights.
Nose:
Concentrated nose of black fruits and spices (garrigue). Cocoa notes, slightly smoky. Beautiful complexity when aerated.
Palate:
Smooth attack, with a generous palate and silky tannins. Beautiful notes of tobacco leaves and black fruits, with a hint of tonka bean. Powerful and persistent finish.
Sommelier's advice: Roasted rack of lamb with herbs and garlic and rosemary roasted potatoes, matured beef tataki, and grilled eggplant with olive oil.

Harvest:
The grapes are harvested manually in small crates.
Soil:
The vineyard is located on ancient high-altitude terraces (850-900 m above sea level). Deep, clay-limestone or even marl-limestone soil.
Vinification:
100% destemmed
Fermentation in concrete vats with indigenous yeasts, 30 to 40 days of maceration with two pump-overs per day.
Ageing:
The wine is aged in 300L French oak barrels for 24 months, then for 3 years in corked bottles.
