Tasting notes
Appearance:
Pale gold.
Nose:
Complex and mineral, with notes of white flowers, lemony, finely toasted.
Palate:
Chiselled attack, full of saline tension. A hint of brioche and a sapid finish with notes of minerality, lime and grilled corn.
Sommelier's advice: With this wine we liked madeleines with cured ham and pesto rosso sauce, chicken sauté with pepper cream, tomato and red onion tatin and burrata.

100% Clairette blanche.
Harvest:
Manual harvest at optimum ripeness.
Soil:
Marly-limestone scree in the south of the Vercors, at an altitude of 450m.
Vinification:
Whole-grape pressing. Light settling, moderate use of sulphur. Fermentation with indigenous yeasts, for the most part in 350L barrels and in "pieces" (228L).
Ageing:
Aged on total lees for 12 months.
