nose of delicate white flowers with fine lemmony nuances.
broad on entry and fresh and thirstquenching on the mid-palate with a nice balance. Notes of white flesh fruits, slightly milky. Sapid finish with notes of rhubarb.
Recommended food pairing: Sea bass ceviche, tangy citrus and ginger juice, snacked scallops with lemon mousseline sauce, asparagus risotto...
Serving temperature: 8-9°C.
Ageing potential: 2-3 years.
Clay, quartz pebbles, limestone gravel and loess. Areas with leptynites (gneissic metamorphic rock) granitoids.
Direct pressing of whole bunches. Selection of the best juices coming off the press. Light settling. Fermentation in stainless steel vats.
Ageing on the gross lees in stainless steel vats for 8-9 months with resuspension of the lees every 2 months.
