Appearance:
the colour is garnet-red, very steady, deep and brilliant with purple lights.
Nose:
open, expressive and complex with aromas of very ripe black fruits (elderberry, blackberry), some spicy scents (pepper, Garrigue).
Palate:
great attack, tight but silky tannins. One notices a dominance of spicy scents, a lot of richness, a good length and a very ethereal final.
Sommelier's advice: game and truffle, big piece of beef.
Grape variety/varieties:
Grenache 65%, Syrah 35%.
Harvest:
Grapes are hand-harvested.
Soil:
Clay and calcareous soil and schists.
Vinification:
The extraction is only performed by punsching of the cap during a long maceration which lasts at least 4 weeks.
Ageing:
100% in barrels for 18 months.
