intense spices notes (black pepper, cloves) and black fruit gums. Notes of blackberries and graphite.
full-bodied on the entry with velvety tannins. The palate is deep yet still nice and light. On the finish, the ripe black fruit notes intermingle with those of cedar, concentrated juice and tapenade.
As an accompaniment we suggest: Roast fillet of duck, seasonal vegetables and spiced jus.
Serving temperature: 15-17°C.
A blend of Terroirs surrounding the Hermitage hill. Coarse-grained rocky granite on the western flank, puddingstone on the eastern flank; river alluvium terrace in the Chassis area.
Vinification in small concrete vats after destemming. Fermentation with indigenous yeasts and moderate use of sulphur. Maceration for 3 to 4 weeks.
Entirely in casks and small wooden barrels for around 14 to 16 months, with 15% new barrels.
