Appearance:
golden yellow.
Nose:
complex nose with fruity notes of pears,
Palate:
the palate develops a fine structure, a nice smooth character, and a smoky and saline finish which gives the wine excellent length.
Sommelier's advice: stir-fried baby cuttlefish with wild garlic flowers.
Grape variety/varieties:
100 % Albillo mayor.
Harvest:
Grapes picked by hand and placed into crates.
Soil:
Clay-limestone.
Vinification:
Direct pressing in whole bunches, cold static settling, fermentation with native yeasts in stainless steel vat (70%) and demi-muid barrels (30%). No malolactic fermentation.
Ageing:
Aged on its lees for 12 months.
