Tasting notes
Nose of ripe and slightly stewed red fruit, blueberry coulis, crumpled fig leaf and spices.
Broad on entry with fresh, velvety tannins. Full-bodied juice with a touch of cedar. Lingering complex finish with notes of sweet spice.
Colour Recommended food pairing: Partridge with chanterelles.
Serving temperature: 14°C to 16°C.
Ageing potential: 20 years.
Cool, south-east facing terroir on the hills of the appelation at an altitude of 400 m. Rankosol over hardly weathered white granites and brow saprolites.
Traditional vinification, destemmed grapes. Fermentation lasts 10 days in rough concrete vats. Maceration lasts from 4 to 5 weeks.
Malolactic fermentation carried out in barrels (20% new) and casks. Aged for 16 to 18 months.
