Tasting notes
Appearance:
purplish tints.
Nose:
pronounced wild berry (raspberries, blackberries, blackcurrants) and Morello cherry notes.
Palate:
the red fruit, with the Morello cherry notes, makes this a rich, delectable wine on entry to the palate, and is followed by supple, silky tannins creating lovely length.
Sommelier's advice: Recommended food pairing: camargue-style Beef Gardiane. Serving temperature: 16-18°C.
Grape variety/varieties:
Blend of Syrah, Grenache and Marselan.
Harvest:
The harvesting takes place in the early hours of the morning thus avoiding the heat of the day and preserving the freshness of the grapes.
Soil:
After full destemming, the grapes go into concrete tanks where each varietal is vinified separately to bring out the very best of each. Alcoholic fermentation is brought on by indigenous yeasts and is followed by regular pumping over and rack and return operations. Each tank is then run off with a separation of the free-run and press juices. Final blending takes place once malolactic fermentation is completed.
