Tasting notes
Appearance:
Bright, pale yellow with green highlights.
Nose:
Floral aromas mixed with citrus notes.
Palate:
Fresh and opulent on entry. Lovely minerality mid-palate complemented by a delicate touch of white-fl eshed fruit. Long, lingering finish with a hint of aniseed.
Sommelier's advice: Herb encrusted baked haddock
Grape variety/varieties:
Grenache blanc, Roussanne, Viognier
Harvest:
For a perfect varietal expression, the various grape varieties are picked at night when ripe. The coolness of the night helps protect the clusters of grapes from oxydation.
Soil:
The vineyards are located in the Gard, in the Laudun area, and are selected and grown on clay-limestone soils.
Vinification:
After pressing, a 24 hours cold stabilization is carried out. Once settled, alcoholic ermentation can begin. The fermentation temperature will be controlled at 16-18°C in order to preserve aromatic freshness.
Ageing:
The wine is aged on its fine lees in stainless steel vats and bottled in early summer.
