Tasting notes
Appearance:
intense and deep ruby colour with hints of violet.
Nose:
black fruits, violet and fur.
Palate:
fresh attack, velvety middle palate. Spices, slightly acid wild strawberries. A great length.
Grape variety/varieties:
Shiraz.
Harvest:
Harvest is performed at maturity avoiding over-maturation.
Soil:
The soil is composed of schists, lauze rocks made of limestone and quartz.
Vinification:
100% destemmed grapes are fermented in concrete or stainless steel tanks. Maceration lasts from 4 to 6 weeks. A gentle extraction by pumping over and a long maceration on skins ensure elegant and finest tannins.
Ageing:
100% of the wine is aged for 18 months in French wood barrels.
