Nose:
It has a bouquet of dark berries and cherries
Palate:
palate brimming with glossy, blackberry and blackcurrant fruit with hints of spice and eucalyptus over a background of ripe tannins.
Sommelier's advice: Ageing period: from 5 to 10 years.

Soil:
Our soils are derived from Cambrian period basaltic rock of 500/600 million years age. They are quite rare in the world because of their great age, particularly in Australia. Here in Heathcote they are unusually deep (up to 4 metres), rusty red coloured, well drained, gravelly loams on undulating hillsides, with good moisture retention capabilities.
Vinification:
Organically grown grapes are picked by hand, completely de-stemmed and go through maceration for around 6 weeks, during which time there is minimal intervention in order to allow the grapes from each individual paddock to express their individual terroir.
Ageing:
The wine is then transferred into small French oak barriques, 20% of which are new, (without any racking, fining or filtration) for around 14 months. Georgia’s Paddock shiraz is predominately aged in American oak.
