The Fine Eau-de-Vie is produced from the distillation of our wines.
The wines come from the northern and southern terroirs of the Rhône Valley: Hermitage, Côte-Rôtie, Cornas, Châteauneuf-du-Pape... They are distilled “with the lees” in order to confer their typical character and generosity on the eau-de-vie.
We carry out our own traditional distillation using a hundred-year-old copper column still. Using our skill, combined with high quality raw material, we can obtain a white eau-de-vie with 70% alc.Vol. via a single batch distillation process, which preserves the aromatic and taste characteristics of the different Rhône Valley terroirs.
The white eau-de-vie is then aged for 15 to 20 years in 228 litre barrels (pièces) and 600 litre barrels (demi-muids) of fine-grained French oak which had previously held our finest red and white wines. This ageing adds empyreumatic, spice and tobacco notes to the refined, floral bouquet, and the liquid takes on an intense golden hue with copper tints. The eau-de-vie becomes richer and more complex, with long lingering aromas and flavours on the palate.
Over the years, the gradual evaporation of the alcohol (the “angels’ share”) results in a natural reduction of the alcohol to between 40 and 45% alc.Vol.
