Tasting notes
Appearance:
A coppery colour with hints of straw.
Nose:
Its powerful nose of caramelised apples is tinged on opening with notes of vanilla, precious woods and cinnamon.
Palate:
With a fine attack, its balanced, smooth palate gives way to aromas of light tobacco and toffee. The finish is rounded off by notes of musk.
Vinification:
After a rather cool June, the summer of 1997 turned out to be a scorcher. In these conditions, the grapes reached historic levels of ripeness, making comparisons as far back as the legendary 1947 vintage.
This fine eau-de-vie is produced by distilling part of our 1997 wines in our traditional all-copper column still.
It was then aged in French oak barrels (228 litres) for 20 years. It then took on a coppery colour with hints of straw.
