Tasting notes
Appearance:
Crystal-clear with an alluring golden hue.
Nose:
A bouquet of floral and fruity aromas (white peach). The minerality combined with the notes derived from the ageing process lend the wine great complexity.
Palate:
A fine tension lifts the wine. Balance is achieved thanks to the luscious character of the Chardonnay and the well-crafted ageing.
Sommelier's advice: Serve between 10° and 12°C with a whole roasted line-caught sea bass in lemon or slow-cooked veal cutlets.

Vinification:
Pneumatic pressing followed by a light cold settling. Immediate transfer into barrel for fermentation with native yeasts at a controlled temperature of 20° to 21°C to confer breadth and structure to the wine. Malolatic fermentation may or may not be carried out depending on the tastings of the wine.
Ageing:
Aged on the fine and gross lees in 70% to 100% French oak barrels (400 litres) for 10 to 12 months (30% new wood). Light filtration.
