Tasting notes
Appearance:
crystal clear and bright with a pale gold hue.
Nose:
very fine floral notes mingling with fruity aromas and a remarkable minerality. The ageing process has created a fine reduction and great complexity.
Palate:
this is a voluptuous yet delicate wine to which the minerality and acidity add depth. Long, mouth-watering finish.
Sommelier's advice: Serve between 10°-12°C with fillet of pike-perch with beurre blanc or crispy veal sweetbreads with morel mushrooms. Cellar-ageing potential of 7 to 12 years.

Soil:
Stony clay-limestone terroir, rich in iron oxides (red clay and ferruginous limestone). Southeast facing.
Vinification:
Pneumatic pressing followed by a light cold setting. Immediate transfer into barrel for fermentation with native yeasts at a controlled temperature of 20° to 21°C to confer breadth and structure to the wine. Malolactic fermentation may or may not be carried out depending on the tastings of the wine.
Ageing:
Aged entirely in French oak barrels (400 litres) on its fine and gross lees for 10 to 12 months (35% new wood). Light filtration.
