Michel Chapoutier advocates total freedom. The freedom to turn one’s back on traditional practices. To dare to experiment with biodynamic practices at a time when no-one believed in them. To buy a vine parcel on a hunch, or after long hesitation, at a time when the voice of Brel could be heard on the radio singing “le monde sommeille par manque d’imprudence” (the world is falling asleep due to a lack of recklessness). It is Michel Chapoutier’s touch of craziness that encourages him to takes risks without even realising it, yet always with complete faith in his convictions.
