Revelation of a high altitude Terroir
The history of Die is closely linked to that of its sparkling wines. But Domaine Souffle de Solaure is a different proposition for Maison M. CHAPOUTIER.Nestling in the heart of the Vercors Massif, the Terroir is the coolest in Die and one of the highest in France. It benefits from favourable exposure, contributing to the freshness and quality of the grapes. Far from the Hermitage terraces, the altitude and influence of the Vercors mountains bring freshness to the whites.
The Domaine has produced two white wines: a Coteaux de Die and a Clairette de Die "méthode ancestrale" biodynamique. These wines highlight the richness and diversity of this Terroir. With Souffle de Solaure, we want to combine this authentic, well-preserved mountain Terroir with an exceptional grape variety. Michel Chapoutier compares Clairette to Chardonnay of the south, describing it as 'a sponge for Terroir, reproducing it with finesse and elegance'. This approach aims to highlight the richness and diversity of this still little-known Terroir, by producing wines that reflect its authenticity and preservation.
Did you know? The name 'Solaure' refers to a local wind that blows in Saillans, on the Solaure plateau, where our vines are located. This wind embodies the second wind we want to breathe into this estate.
Inspired by alchemical codes, the Domaines Souffle de Solaure wine labels are represented by a winged globe with a cross representing 'the sublime Earth'.

Clairette de Die 'méthode ancestrale' : an enchanted bubble
What grape variety is used to make Clairette de Die?
Biodynamically grown, Clairette de Die is made from 90% Muscat petit grain and 10% Clairette. Our Clairette vineyards are located in one of the highest vineyards in France, at an altitude of 700 metres, on clay-limestone soils.
This sparkling white wine is the result of an ancestral method, where fermentation takes place naturally in the bottle, capturing all the essence of the grape.
How do you drink Clairette de Die?
Tasted between 7 and 9°C, the wine's aromas of coriander seeds, citrus fruit, fresh grass and mango come through on the nose, with finely elegant bubbles. Tasted with crayfish snacked with basil and olive oil or with a walnut tart, Clairette de Die will reveal a fine balance combining complexity and lightness, with lingering aromas of fresh muscatel verbena.
When should you drink Clairette de Die?
Clairette de Die is ideal for celebrating special occasions sush as weddings, birhtdays or Christamas thanks to its festive, sparkling character. It lends itself wonderfully to an aperitif with friends or family, offering a touch of freshness and elegance to start the meal.
Clairette de Die also goes perfectly with light, fruity desserts, such as apricot tart or fresh fruit salad, making it an excellent option for ending a meal on a sweet, refreshing note.

The Coteaux de Die appellation, a secret appellation :
The Coteaux de Die appellation is one of the smallest in the Rhône Valley, with just 3 hectares in production. Situated in the heart of the Alps, the hillsides benefit from generous sunshine and are cradled by a cool altitude.
Coteaux de Die Souffle de Solaure is a dry white wine that epitomises elegance and finesse. Made from the Clairette blanche grape variety and grown organically, this wine is a veritable ode to purity and freshness. The vines, perched on steep hillsides, benefit from optimum sunshine and a refreshing breeze, creating ideal conditions for producing an exceptional wine. The wine reveals a complex, mineral nose with aromas of white flowers and finely toasted lemon. On the palate, Coteaux de Die reveals citrus aromas, a hint of brioche and a subtle minerality, offering a refined and memorable tasting experience.
It goes wonderfully well as an aperitif with cured ham madeleines, pesto rosso sauce, sautéed poultry with pepper cream, and a tomato, red onion and burrata tatin. A white wine to enjoy with both winter and summer dishes.
