Oeil :
Light gold.
Nez :
Mineral with notes of struck pebbles, roasted hazelnuts, almonds and white-fleshed fruit. After aeration, nuances of praline, popcorn, hot stone and spices.
Bouche :
Velvety on entry. Fresh and saline with a refreshing texture. The finish is savoury and complex with ripe fruit and toasted almond notes.
Les conseils du Sommelier : L’Ermite white is a wine of great finesse, with notes of reduction and a flinty nose. The attack is supremely fresh and the palate mouth-wateringly saline… the expression of extreme minerality.

Marsanne. Selection of our oldest vines.
Vendanges :
Hand harvesting at maturity.
Sol :
Situated at the top of the Hermitage hill, around the chapel, in a place named the “Ermite”, soils are very poor and granitic.
Vinification :
After a light cold-settling, fermentation is entirely made in casks between 18 and 20°C.
Elevage :
After a long period of fermentation, the wine is matured on lees, with regular stirrings, between 10 and 12 months.
