Vendanges :
The grapes, grown in selected vineyard parcels, are picked mechanically, early in the morning, to protect the musts from oxydation and to preserve the varietal aromas.
Sol :
The clay-limestone soils in the valley between Aygues and Ouvèze enjoy a particularly sunny micro-cimate, sheltered from the Mistral wind. A short distance away, Mont Ventoux influences the climate with cool nights (helping the synthesis of polyphenols in the skins).
This vineyard situated at altitude (300 to 500 metres)
gives the wine its crisp, fresh character.
Vinification :
After destemming, the grapes are vinifi ed in concrete tanks for four weeks. Pumping over operations are staggered and carried out each day to gently extract the aromatic substances, anthocyanins and tannins. The temperature of the alcoholic fermentation is checked and regulated. At the very end of alcoholic fermentation, the temperature is allowed to rise to 30-32°C to help the polymerization of the tannins. This will be followed by malolactic fermentation (natural deacidification.
Elevage :
Ageing in concrete tanks for 6 months.
Degré d’alcool :
