Oeil :
golden straw yellow.
Nez :
very intense of exotic fruits, orange and apricot.
Bouche :
very mellow with a long persistency. Well-balanced between alcohol and residual sugars. This wine has a very long ageing potential.

Vendanges :
The grapes are harvested by hand at optimum maturity in small 10kg crates. The grape are then stored in a dryer for 30 to 50 days. (passerillage = slow dehydration to concentrate the sugars, acids and aromas naturally contained in the grapes).
Sol :
The soil is composed of clay on the surface, and basalt from the Coiron Massif.
Vinification :
Whole bunch pressing, light settling, very long fermentation with indigenous yeasts in big wooden barrels (600 liters). Because of the high sugar content of the must, fermentation naturally stops at around 120g of residual sugar.
Elevage :
24 months on fine lees.
