Oeil :
Intense, ripe cherry red and rich with purple highlights.
Nez :
A very intense wine, dominated by stewed black fruit (blueberry) and red fruit (ripe cherry). Enhanced by an elegant touch of spice (garrigue) and a slight hint of smoke.
Bouche :
Powerful entry with red fruit flavours and great elegance with fine, silky tannins. Very long finish with hints of black berries.
Les conseils du Sommelier : To serve between 16 and 18°C.

Vendanges :
Harvesting is carried out by hand and transported in crates of 16kg.
Sol :
The parcel from which this wine is made is located on a clearing surrounded by holm oaks on a south-west-facing slope at an altitude of 875m (above sea level). The soil is light, sloping, not too deep, sandy-clay-limestone.
Vinification :
Vinification takes place in concrete vats, the grapes are destemmed and fermented using indigenous yeasts with cold maceration prior to fermentation. Long maceration for 6 weeks and part of the malolactic fermentation in new barrels, 10%.
Elevage :
The wine is aged in 300-litre French oak barrels and half 600-litre muids for 21 months. It is then matured for over a year in bottle.
