Oeil :
Garnet red with purple highlights.
Nez :
Nice intensity of wild dark berry notes (blackcurrant, blackberries), mineral notes (graphite), underscored by lovely, smooth oakiness. Palate: soft and well-balanced.
Bouche :
Soft and well-balanced on entry. Fine, tight tannins, beautiful mineral tautness derived from the granite. Long-lasting finish with lovely dark berry notes.
Les conseils du Sommelier : "Les Granilites" is a mineral wine. Its Terroir provides it with lovely taunt acidity and a well honed tannic structure.
Recommended food pairing: Roasted quail with shallots, potatoes millefeuille.
Serving temperature: 15-17°C.

Vendanges :
Whole harvest at perfect ripeness.
Sol :
Produced from a blend of parcels, mainly in the south of the appellation, on a more or less decomposed granite Terroir. Villages of Mauves, Tournon, Saint-Jean-de-Muzols, Saint-Désirat and Limony.
Vinification :
Vinification in small concrete vats after destemming. Fermentation with indigenous yeasts and moderate use of sulphur. Vinification temperature does not exceed 28°C. Maceration for 3 to 4 weeks.
Elevage :
Aged 80% in 228L and 600L barrels (10% new wood) and 20% in unlined concrete vats for 14 to 16 months.
