Oeil :
A coppery colour with bronze highlights.
Nez :
Its powerful nose of stewed fruit is tinged on opening with notes of white flowers and Bourbon vanilla.
Bouche :
Round on the palate, this generous wine gives way to aromas of prunes, roasted nuts and undergrowth. On the finish, the notes of rancio associated with the prolonged ageing of this eau-de-vie are accompanied by subtle hints of iodine.
Vinification :
With near-perfect summer conditions, the 1995 vintage enabled the most patient winegrowers to produce some very fine wines. Once the September rains had subsided, the vines produced remarkably ripe, well-balanced fruit.
This Fine Eau-de-Vie is distilled from part of our 1995 vintage using our traditional all-copper column still.
It was then aged in French oak casks (228 litres) for 20 years. It then took on a coppery colour with flashes of bronze.
