Harvesting is carried out at night, by machine, to limit oxydation and preserve the aromatic qualities.
Stony marl and gravelly alluvial deposits.
Total de-stemming followed by a light, cold maceration on the skins and gentle pressing. Cold static settling. Low-temperature alcoholic fermentation in concrete tanks. The wine is protected against oxygen to preserve its aromatic potential.
