Oeil :
Lovely intense garnet red hue according to the age.
Nez :
Complex aromas of fruit (overripe Morello cherries) and flowers (violets), some touches of spice (cinnamon) with an unusual hint of iodine.
Bouche :
Showing great freshness with a nice balance between sugar, alcohol and acidity. Soft tannic structure characteristic of this schist terroir. Mineral and saline notes on the finish.

Vendanges :
The harvest is carried out by hand. The grapes are picked when very ripe with over 15% potential alcohol.
Sol :
The hillsides are made up of very old and very poor shallow schist soil.
Vinification :
The bunches are de-stemmed and crushed. A long maceration is carried out to encourage the development of the aromas and the extraction of the tannins.
Elevage :
The wine is aged for 8 months in vats in a reductive environment. After bottling and before its release for sale, the wine undergoes another 3 months of ageing.
