slightly reductive nose, the reduction is beautiful with notes of fresh lees slightly grilled, gamey. The agitation reveals floral notes of peony.
subtle, delicate mouth, the structure is silky with a nice length.
What we liked with this wine: Veal rice in crepinette, vitelotte potato crisp.
The grapes are harvested at optimum maturity.
Present on a soil with a finer texture and deeper than the neighboring plot Fels (more than 30cm).
The vinification begins with a total destemming. The fermentation is done with indigenous yeasts. The wine macerates in vats for 3 weeks. A light filtration is done before bottling.
The wine is aged in french oak barrels for 12 months.
