clear gold hue with bright highlights.
complex nose with notes of almonds and a slight brioche character. After aeration, notes of honeysuckle and an aniseedy touch of fennel start to come through. These are followed by hints of praline, acacia honey, yellow-fleshed fruit and candied citrus.
broad on entry to the palate with a creamy texture. The balance is provided by a slight fresh vegetal overtone.
The long-lingering and very pleasant finish shows hints of fudge along with some lovely bitters.
brouillade of truffle fresh eggs, foie gras ravioli with pear, burbot tajine with unpeeled garlic cloves.
Serving temperature: 12-14°C.
Ageing potential: 10-15 years.
The blend comes from different Ermitage plots located in the Les Murets (pebbles over red clay), Le Méal (fluvio-glacial alluvium, pudding stone and loess) and l’Ermite (granitic sands) ‘lieux-dits’.
The grapes from the different plots are harvested and vinified separately. The bunches are pressed whole and then undergo a slow fermentation using native yeasts. The lees are regularly stirred up (bâtonnage). The wines from the ‘Lieux-dits’ are then blended ready for ageing.
35% of the blend is aged in stainless-steel vats and 65% in demi-muids for 15 months.
